Boiling the Sap

With the warm weather this weekend we collected an average of 4 gallons  of sap a day (stored in the white bucket in the picture above).  For boiling such small amounts we decided to do so on our stove indoors. With 2 pots going it took about 6 hours of boiling to reduce the sap to syrup, turning the loft into a humid tropical space.

I over boiled the first batch, you can see it is not clear, it was thick but oh so yummy, four gallons of sap equals a pint of syrup. If you over boiled you can just add boiling water to reduce the consistency

Here is the second batch I boiled yesterday. No over boiling this time as you can tell by the clarity of the syrup, maybe a tad under boiled. Behind the syrup are the books I have been referencing. The Maple Sugar Book by Helen and Scott Nearing is chock full of all kinds of good information but the info is somewhat hard to find in a pinch which is where the small Backyard Sugaring book comes in handy
